  • 1 cup mayonnaise

  • 2 tbsp yellow mustard

  • 1/2 cup chopped celery

  • 1/2 cup chopped dill pickles or relish

  • 1/4 cup chopped red onion

  • 4 hard-boiled eggs, chopped

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp paprika (optional, for garnish)

Instructions

  • Boil potatoes in salted water for 10-15 minutes until tender. Drain and let cool.

  • In a large bowl, mix mayo, mustard, salt, and pepper.

  • Add cooled potatoes, celery, pickles, onion, and eggs. Stir gently to combine.

  • Refrigerate for at least 1 hour before serving.
