This Ground Beef and Potatoes Skillet recipe is a quick, hearty meal featuring savory ground beef, crispy potatoes, and veggies, all cooked in one pan. Perfect for busy weeknights, this dish is loaded with flavor and makes a comforting family dinner with minimal cleanup.

Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped (optional)
  • 1 cup frozen peas or corn (optional)
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • 1/4 cup shredded cheddar cheese (optional)
  • 2 tbsp chopped parsley (for garnish)

Instructions

  • Heat 1 tbsp of olive oil in a large skillet over medium heat. Add diced potatoes and cook for 10-12 minutes, stirring occasionally, until golden and crispy. Remove from skillet and set aside.
  • In the same skillet, add the remaining 1 tbsp olive oil. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
  • Add chopped onion, garlic, and bell pepper to the beef. Sauté until softened, about 3-4 minutes.
  • Stir in paprika, oregano, salt, and pepper. Add the cooked potatoes back to the skillet.
  • Stir in peas or corn (if using) and cook for another 2-3 minutes until everything is heated through.
  • If desired, sprinkle shredded cheese over the top and let it melt.
  • Garnish with chopped parsley and serve hot.

Notes

  • For extra flavor, add a dash of Worcestershire sauce or hot sauce.
  • You can substitute sweet potatoes for a healthier option.
  • Leftovers can be stored in the fridge for up to 3 days.
