  • Main Ingredients:
    • 8 medium-sized potatoes, scrubbed and dried
    • 2 tablespoons olive oil
    • 1 tablespoon kosher salt or sea salt
    • ½ pound bacon, cooked and chopped
    • 6 ounces sharp cheddar cheese, shredded
    • ¾ cup mayonnaise
    • ¾ cup sour cream
    • 4 green onions, sliced
    • Salt and pepper to taste
  • Topping Ingredients:
    • ¼ pound bacon, cooked and chopped
    • 2 ounces sharp cheddar cheese, shredded
    • 2 green onions, sliced

Instructions

  • Preheat oven to 400°F (200°C).
  • Rub the potatoes with olive oil and season with kosher salt. Place on a baking sheet and bake for 45-50 minutes or until tender.
  • Let potatoes cool slightly, then cut in half and scoop out the insides into a large bowl. Leave a thin layer of potato attached to the skin.
  • Mash the potato insides and mix with bacon, cheddar cheese, mayonnaise, sour cream, and green onions. Season with salt and pepper.
  • Scoop the mixture back into the potato skins or transfer to a casserole dish.
  • Sprinkle the topping ingredients over the potatoes.
  • Bake for an additional 15-20 minutes or until the cheese is melted and bubbly.
  • Garnish with additional green onions if desired and serve hot.

Notes

  • For a lighter version, you can use Greek yogurt instead of mayonnaise.
  • This casserole can be prepared a day in advance and baked just before serving.
