  • 1 lb cooked chicken (shredded or diced)
  • 16 oz potato gnocchi
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups spinach (chopped)
  • 2 medium carrots (diced)
  • 2 celery stalks (diced)
  • 1 small onion (diced)
  • 3 garlic cloves (minced)
  • 1 tsp thyme
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large pot over medium heat. Sauté onion, carrots, celery, and garlic until softened.
  • Add shredded chicken, thyme, and Italian seasoning, stirring well.
