  • For the Chicken:
    • 2 large boneless, skinless chicken breasts, cut into 1-inch pieces
    • 1 tablespoon low sodium soy sauce
    • 1 teaspoon sesame oil
    • 2 large eggs, beaten
    • ½ cup all-purpose flour
    • Cooking spray
    • 2 green onions, green parts only, chopped
  • For the Lemon Sauce:
    • 2 tablespoons unsalted butter
    • ½ cup freshly squeezed lemon juice
    • ¼ cup granulated sugar
    • ⅔ cup low sodium chicken broth
    • 2 tablespoons low sodium soy sauce
    • 1 tablespoon cornstarch

Instructions

  • Preheat the air fryer to 400°F.
  • In a bowl, mix chicken pieces with soy sauce and sesame oil.
  • Dredge the chicken in flour, dip in beaten eggs, and coat with flour again.
  • Spray the air fryer basket with cooking spray. Place chicken pieces in the basket, spray with cooking spray, and cook for 10-12 minutes, turning halfway through.
  • In a saucepan, melt butter over medium heat. Add lemon juice, sugar, chicken broth, and soy sauce. Bring to a simmer.
  • Mix cornstarch with a little water to form a slurry. Stir into the sauce and cook until thickened.
  • Toss cooked chicken with lemon sauce and garnish with chopped green onions.
