    • 1 pound salmon, cut into 1-inch cubes
    • 1 tablespoon low-sodium soy sauce
    • ½ teaspoon black pepper
    • 1 teaspoon garlic powder
    • 2 teaspoons olive oil
  • For the Creamy Garlic Sauce:
    • 2 tablespoons unsalted butter
    • 4 cloves garlic, minced
    • ¼ cup dry white wine (or chicken broth)
    • 1 cup heavy cream
    • ½ cup freshly grated Parmesan cheese
    • 1 tablespoon fresh lemon juice
    • 2 teaspoons cornstarch (optional)
    • 2 tablespoons fresh parsley, chopped

Instructions

  • Preheat the air fryer to 400°F (200°C).
  • In a bowl, combine salmon cubes, soy sauce, black pepper, garlic powder, and olive oil. Mix well to coat.
  • Place salmon cubes in the air fryer basket in a single layer. Air fry for 8-10 minutes, turning halfway through, until cooked through and slightly crispy.
  • While the salmon is cooking, prepare the creamy garlic sauce. In a saucepan, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  • Stir in white wine (or chicken broth) and simmer for 2-3 minutes.
  • Add heavy cream, Parmesan cheese, and lemon juice. Stir until the cheese melts and the sauce thickens. If needed, mix cornstarch with a little water and add to the sauce to thicken further.
  • Remove from heat and stir in chopped parsley.
  • Serve the salmon bites with the creamy garlic sauce drizzled on top or on the side.

Notes

  • For a dairy-free version, substitute heavy cream with coconut milk and Parmesan cheese with nutritional yeast.
