Ingredients

  • Cake: 2 cups all-purpose flour, 1 ½ tsp baking soda, ½ tsp salt, 1 tsp cinnamon, 1 cup sugar, 1 cup brown sugar, 1 cup vegetable oil, 3 large eggs, 2 tsp vanilla extract, 2 cups diced apples, 1 cup chopped pecans
  • Caramel Glaze: ½ cup butter, 1 cup brown sugar, ¼ cup heavy cream, 1 tsp vanilla extract

Instructions

  • Prepare the Cake: Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish. In a bowl, whisk together flour, baking soda, salt, and cinnamon.
  • Mix Wet Ingredients: In another large bowl, combine sugar, brown sugar, and oil. Add eggs and vanilla, mixing well.
  • Combine and Fold: Gradually add dry ingredients to the wet mixture, then fold in apples and pecans.
  • Bake: Pour batter into the prepared pan. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
  • Make Caramel Glaze: In a saucepan, melt butter over medium heat. Add brown sugar and cream, stirring until smooth. Bring to a boil and cook for 2 minutes, then remove from heat and add vanilla.
  • Finish: Pour warm caramel glaze over the cooled cake and let it set before serving.

Notes

  • For extra flavor, use Granny Smith apples for a tart contrast to the sweet glaze.
  • Let the cake cool slightly before adding the caramel glaze for the best texture.
