  • 5 cups fresh apricots, pitted and quartered
  • 1 teaspoon lemon juice
  • 1 teaspoon sugar for sprinkling (optional)

Instructions

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, mix 2 ½ cups flour and 1 teaspoon salt.
  • Cut in the butter-flavored shortening until the mixture resembles coarse crumbs.
  • Gradually add 6 tablespoons water, mixing until the dough holds together. Divide the dough into two balls.
  • On a floured surface, roll out one dough ball to fit a 9-inch pie plate. Place the crust in the pie plate.
  • In another bowl, combine 1 cup sugar, 1/4 cup flour, and 1/4 teaspoon cinnamon. Add the apricots and lemon juice, tossing gently to coat.
  • Pour the apricot mixture into the prepared crust.
  • Roll out the second dough ball and place it over the filling. Trim and crimp the edges to seal.
  • Cut slits in the top crust to allow steam to escape. Sprinkle with 1 teaspoon sugar if desired.
  • Bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  • Cool on a wire rack before serving.
