Ingredients

Scale
  • 1 lb fresh asparagus, trimmed and cut into pieces

  • 1 small onion, chopped

  • 2 tbsp olive oil

  • 3 cups vegetable broth

  • Zest and juice of 1 lemon

  • Salt and black pepper to taste

  • 1/4 cup fresh mint leaves

  • 1/2 cup coconut milk or cream (optional for richness)

Instructions

  1. In a pot, heat olive oil over medium heat. Add chopped onion and sauté until soft.

  2. Add asparagus and cook for 5 minutes.

  6. Return to heat, stir in coconut milk if using, and season with salt and pepper.

  7. Serve hot or chilled, garnished with extra mint or lemon zest.

Notes

  • You can use frozen asparagus if fresh isn't available.

  • For a creamier version, add coconut milk or heavy cream.

  • This soup is also delicious served cold on warm days.
