Enjoy a nutritious twist on a classic with this Avocado, Mozzarella, and Tomato Grilled Cheese recipe. Featuring fresh avocado, creamy mozzarella, and juicy cherry tomatoes, all nestled between slices of hearty multigrain bread, it's a perfect blend of flavors and textures.

Ingredients

  • ½ avocado, sliced
  • 4 slices of mozzarella cheese
  • 4 cherry tomatoes, sliced in half
  • 2 slices of multigrain bread (Ezekiel sprouted grain bread is recommended)
  • A dab of butter

Instructions

  • Butter one side of each slice of multigrain bread.
  • On the non-buttered side of one slice, layer the avocado slices.
  • Add the mozzarella slices on top of the avocado.
  • Place the halved cherry tomatoes over the mozzarella.
  • Top with the second slice of bread, buttered side out.
  • Heat a skillet over medium heat and place the sandwich in the skillet.
  • Cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
  • Remove from heat, slice in half, and serve immediately.

Notes

  • For an extra flavor boost, consider adding a pinch of salt and pepper to the avocado.
  • Using a panini press can give you an even crispier sandwich.
