This Avocado Peach Salsa recipe combines ripe peaches, avocado, corn, red onion, jalapeño, cilantro, and lime juice for a refreshing, flavorful salsa. Perfect as a dip or topping, it's a delicious blend of sweet, creamy, and spicy.

Ingredients

Scale
  • 2 medium ripe but still slightly firm peaches, diced
  • 1 ripe but still slightly firm large avocado, diced
  • 1 large ear corn, kernels cut off (about ¾ cup corn)
  • 3 tablespoons finely diced red onion
  • 1 jalapeño, seeded and diced
  • 2 tablespoons finely diced cilantro
  • 1 lime, juiced
  • Salt & freshly ground black pepper, to taste

Instructions

  • Dice the peaches and avocado, ensuring they are ripe but firm.
  • Cut the kernels off the corn cob.
  • Finely dice the red onion and jalapeño.
  • Chop the cilantro finely.
  • In a bowl, combine the peaches, avocado, corn, red onion, jalapeño, and cilantro.
  • Squeeze the juice of one lime over the mixture.
  • Season with salt and freshly ground black pepper to taste.
  • Gently toss all ingredients to combine.
  • Serve immediately or refrigerate for up to an hour before serving.

Notes

  • For extra sweetness, grill the corn before cutting off the kernels.
  • Adjust the amount of jalapeño based on your heat preference.
  • This salsa pairs well with grilled meats or as a topping for tacos.
