  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt and pepper to taste
  • 2 cups fresh spinach
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tsp minced garlic

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken breasts with garlic powder, Italian seasoning, paprika, salt, and pepper.
  3. Heat olive oil in a skillet over medium heat and sear chicken for 2-3 minutes per side until golden.
  4. Remove chicken and set aside. In the same skillet, sauté garlic, spinach, and sun-dried tomatoes until spinach wilts.
  5. Stir in heavy cream and Parmesan cheese, letting the sauce simmer for 2-3 minutes.
  6. Return chicken breasts to the skillet and spoon sauce over the top.
  7. Transfer the skillet to the oven and bake for 15-20 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
  8. Serve hot, garnished with additional Parmesan if desired.
