Ingredients

Scale
  • 4 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1 teaspoon Italian seasoning

  • Salt and pepper, to taste

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • ½ cup chicken broth

  • ½ cup grated Parmesan cheese

  • 1 cup baby spinach

  • ½ cup sun-dried tomatoes (drained and chopped)

  • Fresh basil, for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Season the chicken with salt, pepper, and Italian seasoning.

  3. In a large oven-safe skillet, heat olive oil over medium heat and sear chicken on both sides until golden (about 3-4 minutes per side).

  4. Remove chicken and set aside.

  5. In the same skillet, add garlic and cook until fragrant.

  6. Stir in heavy cream, chicken broth, and Parmesan cheese. Simmer for 2–3 minutes.

  7. Add spinach and sun-dried tomatoes. Stir until spinach wilts.

  8. Return the chicken to the skillet, spoon sauce over the top.

  9. Bake uncovered for 20–25 minutes, or until chicken is cooked through.

  10. Garnish with fresh basil and serve!

Notes

  • Use thin chicken breasts for quicker cooking.

  • Add red pepper flakes for a bit of heat.

  • Substitute half-and-half for a lighter sauce.

  • Great served over pasta, mashed potatoes, or rice.
