Barbecue Apricot Chicken is a delicious and easy-to-make dish that combines the sweetness of apricots with the tanginess of barbecue sauce. Perfect for family dinners or summer gatherings, this recipe brings out the best in both chicken and fruit.

Ingredients

Scale
  • 2 tablespoons vegetable oil, divided
  • 6 to 8 small apricots, halved and seeds removed
  • 6 skinless, bone-in chicken thighs
  • 1 tablespoon chicken seasoning blend (adjust to taste)
  • 2 cloves garlic, minced
  • 1/2 cup low sodium chicken broth (or apple/apricot juice)
  • 2 tablespoons apricot preserves (sugar-free option available)
  • 1/2 cup barbecue sauce
  • Sliced green onions, for garnish

Instructions

  • Heat 1 tablespoon of oil in a skillet over medium heat.
  • Sear the apricots until caramelized, then set aside.
  • In the same skillet, add the remaining oil and brown the chicken thighs, seasoned with chicken seasoning.
  • Add minced garlic and cook until fragrant.
  • Pour in the chicken broth (or juice), apricot preserves, and barbecue sauce. Stir to combine.
  • Return the apricots to the skillet, cover, and simmer until the chicken is cooked through.

  • Adjust the chicken seasoning blend to your taste preference.
