  • 1 tablespoon olive oil
  • 1 pound beef stew meat (or beef chuck roast, cubed)
  • ¾ teaspoon Kosher salt
  • ½ teaspoon black pepper
  • 1 medium yellow onion, chopped
  • 3 ribs celery, chopped
  • 3 carrots, chopped into ½-inch pieces
  • 8 ounces cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 2 tablespoons tomato paste
  • 6 cups low sodium beef broth or low sodium chicken broth
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • ¾ cup pearl barley, rinsed
  • Chopped fresh parsley for serving

Instructions

  • Heat olive oil in a large pot over medium heat. Add beef stew meat and brown on all sides. Season with salt and pepper.
  • Add the chopped onion, celery, and carrots to the pot. Sauté until the vegetables are softened.
  • Stir in the cremini mushrooms, garlic, and thyme. Cook until fragrant.
  • Mix in the tomato paste and cook for a couple of minutes.
  • Pour in the broth and Worcestershire sauce. Add bay leaves.
  • Bring the mixture to a boil, then reduce the heat and simmer for 45 minutes.
  • Add the rinsed pearl barley and continue simmering for another 30 minutes or until the barley is tender.
  • Remove the bay leaves. Adjust seasoning as needed.
  • Serve hot, garnished with chopped fresh parsley.

Notes

  • For extra flavor, you can deglaze the pot with a splash of red wine before adding the broth.
