This Beef Enchilada Bake recipe features savory ground beef, beans, and cheese, layered with corn tortillas and topped with enchilada sauce. Perfect for family dinners and easy to prepare.

  • 2 teaspoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 large bell pepper, any color, diced
  • 1 pound ground beef
  • 1 (15 ounce) can chili beans
  • Salt and pepper to taste
  • 1 teaspoon ground cumin
  • 1 (15 ounce) can red enchilada sauce, divided
  • 12 corn tortillas
  • 12 ounces Mexican blend shredded cheese
  • Cilantro, for garnish (optional)
  • Sour cream, for garnish (optional)

Instructions

  • Preheat oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat. Add chopped onion, minced garlic, and diced bell pepper. Sauté until softened.
  • Add ground beef to the skillet and cook until browned. Drain any excess fat.
  • Stir in chili beans, salt, pepper, and ground cumin. Cook for another 2-3 minutes.
  • Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  • Layer 4 corn tortillas over the sauce. Add a third of the beef mixture and sprinkle with cheese.
  • Repeat layers twice more, ending with cheese on top.
  • Pour remaining enchilada sauce over the top layer.
  • Bake for 20-25 minutes until the cheese is melted and bubbly.
  • Garnish with cilantro and sour cream if desired.

Notes

  • Feel free to use your favorite type of beans or cheese blend.
  • For added heat, consider adding diced jalapeños to the beef mixture.
