Beef Enchilada Casserole with corn tortillas is a quick and hearty Mexican-inspired dish featuring layers of seasoned ground beef, gooey cheese, and enchilada sauce. This flavorful casserole is a great weeknight meal, combining all the classic enchilada flavors in an easy-to-make, baked casserole form.

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 packet taco seasoning
  • 1 (10 oz) can red enchilada sauce
  • 1 (15 oz) can black beans, drained
  • 2 cups shredded cheddar cheese
  • 12 corn tortillas, quartered
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1/2 cup sliced black olives (optional)
  • Optional toppings: sour cream, avocado, cilantro, jalapeños

Instructions

  • Preheat oven to 350°F.
  • In a skillet, cook ground beef and onion until beef is browned. Drain excess fat.
  • Stir in taco seasoning, diced tomatoes with green chilies, and black beans. Simmer for 5 minutes.
  • In a greased baking dish, spread a thin layer of enchilada sauce on the bottom.
  • Layer with corn tortillas, beef mixture, cheese, and more enchilada sauce. Repeat layers, ending with cheese on top.
  • Bake for 20-25 minutes until bubbly and golden.
  • Garnish with optional toppings and serve hot.

Notes

  • You can use green enchilada sauce or a combination of red and green for a twist.
  • For a spicier version, add diced jalapeños or a pinch of cayenne pepper to the beef mixture.
