Make irresistible beef enchiladas with seasoned ground beef, melty cheese, and a zesty enchilada sauce. Perfect for family dinners or gatherings, this easy recipe delivers bold flavors in every bite.

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 can (10 oz) red enchilada sauce
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 8 flour tortillas (6-inch size)
  • 2 tbsp olive oil
  • Optional toppings: sour cream, chopped cilantro, diced tomatoes

Instructions

  • Preheat oven to 375°F (190°C).
  • Heat olive oil in a skillet over medium heat. Add ground beef, onion, and garlic. Cook until beef is browned and fully cooked.
  • Stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook for 1-2 minutes to combine flavors.
  • Pour 1/4 cup of enchilada sauce into the skillet and mix with the beef mixture. Remove from heat.
  • Spread 1/4 cup of enchilada sauce on the bottom of a 9x13-inch baking dish.
  • Spoon beef mixture into each tortilla, sprinkle with cheese, and roll tightly. Place seam-side down in the baking dish.
  • Pour remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining cheese.
  • Bake for 20-25 minutes, until cheese is melted and bubbly.
  • Remove from oven, let cool slightly, and serve with your favorite toppings.

Notes

  • You can substitute ground turkey or chicken for the ground beef.
  • Corn tortillas can be used for a gluten-free option.
  • Adjust seasoning levels based on your heat preference.
