This Beef Noodle Casserole is a comforting, classic recipe that combines tender egg noodles, seasoned ground beef, savory tomato sauce, and melted cheese. It's an easy, budget-friendly dinner that's perfect for busy weeknights or potlucks. With simple ingredients and full of flavor, this cheesy casserole will be a hit with the whole family!

  • 1 lb ground beef
  • 12 oz egg noodles
  • 1 onion (chopped)
  • 2 garlic cloves (minced)
  • 1 can (15 oz) tomato sauce
  • 1 can (10 oz) diced tomatoes
  • 1 tsp Italian seasoning
  • 1 cup sour cream
  • 1 ½ cups shredded cheddar cheese
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley (for garnish)

Instructions

  • Preheat oven to 350°F (175°C).
  • Cook egg noodles according to package directions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add onion and garlic, and sauté until softened, about 3-4 minutes.
  • Add ground beef, cooking until browned. Drain excess fat.
  • Stir in tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 5-7 minutes.
  • In a large mixing bowl, combine cooked noodles, sour cream, and half of the shredded cheddar cheese.
  • Transfer the noodle mixture to a greased casserole dish. Layer the beef mixture on top, then sprinkle with the remaining cheddar cheese.
  • Bake for 25-30 minutes, until bubbly and cheese is melted.
  • Garnish with fresh parsley and serve.

Notes

  • You can substitute ground turkey for a leaner option.
  • Add red pepper flakes for a little heat.
