This beet pasta sauce recipe is a nutritious and flavorful twist on traditional pasta sauces. Ingredients

  • 2 medium beets, roasted and peeled
  • 2 cloves garlic, minced
  • ½ cup heavy cream (or coconut milk for dairy-free)
  • ¼ cup grated Parmesan cheese (optional)
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp lemon juice

 

  • ½ cup pasta water (as needed)

Instructions

  • Roast the beets at 400°F (200°C) for 40-50 minutes until tender. Let cool, then peel and chop.
  • In a blender, add roasted beets, garlic, heavy cream, Parmesan (if using), olive oil, salt, pepper, and lemon juice. Blend until smooth.
  • Adjust consistency by adding pasta water as needed.
  • Heat the sauce in a pan over low heat for 2-3 minutes.

 

  • Toss with cooked pasta and serve warm.

Notes

  • Use coconut milk for a dairy-free option.
  • Add red pepper flakes for a spicy kick.

 

  • Store leftovers in an airtight container for up to 3 days.
