Make tasty breakfast burritos with tater tots, pork sausage, scrambled eggs, refried beans, and cheddar cheese wrapped in a flour tortilla. Ideal for a protein-packed morning.

Ingredients

  • Tater Tots: 2 cups cooked
  • Pork Breakfast Sausage: 1 pound
  • Eggs: 8 large
  • Whole Milk: ⅓ cup
  • Seasonings: 1½ teaspoon onion powder, 1 teaspoon garlic powder, ½ teaspoon salt, ¼ teaspoon pepper
  • Refried Beans: 1 cup
  • Flour Tortillas: 6 (8-inch)
  • Cheddar Cheese: 2 cups shredded
  • Tomatoes: 2 large, diced
  • Cilantro: ¼ cup chopped

Instructions

  • Preheat oven to 425°F and bake tater tots until crispy.
  • Cook sausage in a skillet over medium heat until browned.
  • In a bowl, whisk eggs, milk, and seasonings. Scramble in the skillet until fluffy.
  • Warm refried beans and tortillas.
  • Assemble burritos: Spread beans on tortillas, add sausage, eggs, tater tots, cheese, tomatoes, and cilantro.
  • Roll up burritos and enjoy!

Notes

 

  • To freeze, wrap burritos in parchment paper and place in zip-top freezer bags.
  • Reheat in the microwave or oven as needed.
