  • ½ cup salsa con queso
  • ¼ cup milk
  • 1 teaspoon salt

  • 1 pound breakfast sausage
  • 6-8 flour tortillas
  • 2 cups salsa, for dipping and/or topping the tacos
  • 2 avocados, sliced
  • 1 cup diced tomatoes
  • ¼ cup green onions, sliced

Instructions

  • In a bowl, whisk together eggs, salsa con queso, milk, salt, and pepper.
  • In a skillet, cook the breakfast sausage over medium heat until browned. Remove sausage and set aside.
  • In the same skillet, pour in the egg mixture and scramble until fully cooked.
  • Warm the flour tortillas in a separate pan or microwave.
  • Assemble tacos by dividing the scrambled eggs and sausage among the tortillas.
  • Top with sliced avocados, diced tomatoes, and green onions.
