This Broccoli Chicken Casserole recipe is a creamy, cheesy dish filled with tender chicken, fresh broccoli, and a flavorful sauce. Perfect for busy weeknights or potlucks, this easy casserole is a comforting crowd-pleaser that can be prepped ahead of time.

Ingredients

Scale
  • 2 cups cooked chicken, shredded or cubed
  • 4 cups fresh broccoli florets (or frozen, thawed)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 1/2 cup mayonnaise
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional, for topping)
  • 2 tbsp melted butter (for breadcrumbs)

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  • Steam broccoli florets until tender-crisp (about 3-4 minutes). Drain and set aside.
  • In a large mixing bowl, combine cream of chicken soup, sour cream, mayonnaise, garlic powder, onion powder, paprika, salt, and pepper. Mix well.
  • Fold in the cooked chicken, steamed broccoli, and shredded cheddar cheese until evenly coated with the sauce.
  • Transfer the mixture to the prepared baking dish. Spread it evenly and top with additional shredded cheese.
  • (Optional) In a small bowl, mix breadcrumbs with melted butter and sprinkle over the casserole for a crunchy topping.
  • Bake for 25-30 minutes, or until the casserole is bubbly and golden on top.
  • Let cool slightly before serving.

Notes

  • Rotisserie chicken works great for this recipe to save time.
  • For a healthier option, use Greek yogurt instead of sour cream and light mayonnaise.
  • Pair with rice or dinner rolls for a complete meal.
