  • Main Oatmeal Ingredients:
    • 2½ cups water
    • 1 cup milk
    • 4 tablespoons brown sugar (more to taste)
    • 1 teaspoon cinnamon
    • ½ teaspoon vanilla extract
    • ⅛ teaspoon salt
    • 1½ cups old-fashioned oats
    • 1 cup shredded carrot
    • ¼ cup golden raisins
    • ¼ cup chopped walnuts (extra for topping)
    • 1 tablespoon butter
  • Cream Cheese Yogurt Topping Ingredients:
    • 2 ounces cream cheese (softened)
    • ⅓ cup vanilla yogurt
    • ¼ teaspoon cinnamon

Instructions

  • In a medium pot, bring water and milk to a boil.
  • Add brown sugar, cinnamon, vanilla extract, and salt. Stir to combine.
  • Add oats and shredded carrot. Reduce heat to medium and cook for 5-7 minutes, stirring occasionally.
  • Stir in golden raisins and chopped walnuts. Cook for another 2-3 minutes until the oats are tender.
  • Remove from heat and stir in butter.
  • In a small bowl, mix softened cream cheese, vanilla yogurt, and cinnamon until smooth.
  • Serve oatmeal in bowls, topped with the cream cheese yogurt mixture and extra chopped walnuts.
