  • 2 ¼ tsp active dry yeast

  • ¾ cup warm milk

  • ¼ cup granulated sugar

  • 1 egg + 1 egg yolk

  • ¼ cup unsalted butter, melted

  • 3 cups all-purpose flour

  • ½ tsp salt

For the Filling:

  • ½ cup brown sugar

  • 2 tsp ground cinnamon

  • 1 tsp ground ginger

  • ½ tsp ground cardamom

  • ¼ tsp ground cloves

  • ¼ tsp ground nutmeg

  • ¼ cup unsalted butter, softened

For the Glaze:

  • 1 cup powdered sugar

  • 12 tbsp milk

  • ½ tsp vanilla extract

Instructions

  • Activate yeast in warm milk for 5–10 minutes until foamy.

  • Mix in sugar, egg, yolk, and melted butter.

  • Gradually add flour and salt. Knead until dough is smooth.

  • Let rise for 1 hour until doubled.

  • Roll out dough, spread with softened butter, and sprinkle with chai-spice sugar mix.

  • Roll up and slice into rolls.

  • Place in greased pan, cover, and rise for 30 minutes.

  • Bake at 350°F (175°C) for 25–30 minutes.

 

  • Drizzle with glaze while warm.

Notes

You can prepare the rolls the night before and bake in the morning. Add crushed black pepper for an extra chai kick.
