2 cups cooked chicken, shredded
2 cups cooked rice
1 can (10.5 oz) cream of chicken soup
1 cup milk
1 ½ cups shredded cheddar cheese, divided
1 cup frozen peas and carrots, thawed
½ tsp garlic powder
½ tsp onion powder
Salt and pepper to taste
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine shredded chicken, cooked rice, cream of chicken soup, milk, 1 cup of shredded cheddar cheese, peas and carrots, garlic powder, onion powder, salt, and pepper. Mix well.
Transfer the mixture to a greased 9x13-inch casserole dish. Spread evenly.
Sprinkle the remaining ½ cup of shredded cheddar cheese on top.
Bake in the preheated oven for 25–30 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
Let cool for 5 minutes before serving.
Notes
Substitute cream of chicken soup with cream of mushroom soup if desired.
Use rotisserie chicken for added convenience.
Add a crunchy topping by sprinkling breadcrumbs mixed with melted butter over the cheese before baking.
