Cheesy Chicken and Rice Casserole is the ultimate comfort food! Made with tender chicken, fluffy rice, and a creamy cheesy sauce, this hearty dish is perfect for busy weeknights. It’s an easy and delicious recipe the whole family will love.

Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups cooked rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup milk
  • 1 ½ cups shredded cheddar cheese, divided
  • 1 cup frozen peas and carrots, thawed
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine shredded chicken, cooked rice, cream of chicken soup, milk, 1 cup of shredded cheddar cheese, peas and carrots, garlic powder, onion powder, salt, and pepper. Mix well.
  • Transfer the mixture to a greased 9x13-inch casserole dish. Spread evenly.
  • Sprinkle the remaining ½ cup of shredded cheddar cheese on top.
  • Bake in the preheated oven for 25–30 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
  • Let cool for 5 minutes before serving.

Notes

  • Substitute cream of chicken soup with cream of mushroom soup if desired.
  • Use rotisserie chicken for added convenience.
  • Add a crunchy topping by sprinkling breadcrumbs mixed with melted butter over the cheese before baking.
