1 teaspoon smoked paprika
1 egg
1 green onion (chopped)
1/2 cup grated parmesan or cheese of choice
1 handful cilantro (chopped)
1 tablespoon lime juice
Salt and fresh cracked pepper to taste
1 tablespoon oil (for frying)
Sour or heavy cream (for garnish, optional)
Instructions
In a large bowl, combine corn, cornmeal, flour, smoked paprika, egg, green onion, cheese, cilantro, lime juice, salt, and pepper. Mix well.
Heat oil in a skillet over medium heat.
Drop spoonfuls of the mixture into the skillet, flattening them slightly with a spatula.
