  • 1 teaspoon smoked paprika
  • 1 egg
  • 1 green onion (chopped)
  • 1/2 cup grated parmesan or cheese of choice
  • 1 handful cilantro (chopped)
  • 1 tablespoon lime juice
  • Salt and fresh cracked pepper to taste
  • 1 tablespoon oil (for frying)
  • Sour or heavy cream (for garnish, optional)

Instructions

  • In a large bowl, combine corn, cornmeal, flour, smoked paprika, egg, green onion, cheese, cilantro, lime juice, salt, and pepper. Mix well.
  • Heat oil in a skillet over medium heat.
  • Drop spoonfuls of the mixture into the skillet, flattening them slightly with a spatula.
