  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2 cups mushrooms, finely chopped
  • 3 garlic cloves, minced
  • 4 tbsp unsalted butter
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat oven to 375°F (190°C).
  • In a skillet, heat 2 tbsp butter over medium heat. Sauté mushrooms and garlic until soft and fragrant. Set aside.
  • Butterfly the chicken breasts and season both sides with salt, pepper, paprika, and Italian seasoning.
  • Stuff each chicken breast with the mushroom mixture and mozzarella cheese. Secure with toothpicks.
  • In the same skillet, heat olive oil and sear the stuffed chicken breasts for 3-4 minutes per side, until golden brown.
  • Add remaining butter to the skillet, then transfer to the oven. Bake for 20-25 minutes or until chicken is fully cooked.
  • Remove from the oven, sprinkle with Parmesan cheese, and garnish with fresh parsley before serving.
