These Cheesy Mashed Potato Puffs are a delightful way to use leftover mashed potatoes! Made with cheese, eggs, and seasonings, they bake into crispy, golden bites that are perfect as an appetizer, snack, or side dish.

Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 2 eggs
  • ¼ cup milk
  • ¼ cup chopped green onions
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon baking powder

Instructions

  • Preheat oven to 375°F (190°C) and grease a muffin tin.
  • In a bowl, mix mashed potatoes, cheese, eggs, milk, green onions, garlic powder, salt, pepper, and baking powder.
