Ingredients

  • 5 large russet potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 ½ cups milk
  • 1 cup heavy cream
  • 2 ½ cups shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 3 tbsp butter
  • 2 tbsp all-purpose flour
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  • In a large pot, melt butter over medium heat. Add onion and garlic, sauté until softened.
  • Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until potatoes are tender.
  • In a separate small bowl, whisk flour into milk, then stir into the soup along with the heavy cream.
  • Use an immersion blender to blend the soup until smooth and creamy.
  • Stir in shredded cheddar cheese and half of the crumbled bacon, cooking until the cheese is fully melted.
