This Cheesy Taco Pasta recipe is a delicious one-pot meal featuring seasoned ground beef, pasta, and lots of melted cheese. Perfect for busy weeknights, it's a family-friendly twist on classic taco flavors!

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 packet (1 oz) taco seasoning
  • 2 cups uncooked pasta (penne or shells)
  • 2 cups beef broth
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • ½ cup sour cream
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it into crumbles. Drain excess fat if necessary.
  • Stir in taco seasoning and cook for 1 minute.
  • Add uncooked pasta, beef broth, and salsa to the skillet. Stir to combine and bring to a boil. Reduce heat to low, cover, and simmer for 10-12 minutes, or until the pasta is cooked and most of the liquid is absorbed.
  • Stir in shredded cheddar, Monterey Jack, and sour cream until the cheese is melted and creamy.
  • Season with salt and pepper to taste. Garnish with fresh cilantro and serve hot.
