  • 4 cups sliced zucchini (about 2 medium zucchini)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sour cream
  • 1/4 cup diced onion
  • 1 garlic clove, minced
  • 1 cup breadcrumbs
  • 2 tbsp butter, melted
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme (optional)

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9x9-inch baking dish.
  • Steam or boil the zucchini slices for 3-5 minutes until slightly tender. Drain and pat dry.
  • In a large bowl, combine sour cream, cheddar cheese, Parmesan, onion, garlic, salt, pepper, and thyme. Fold in the zucchini slices.
  • Transfer the mixture to the prepared baking dish and spread evenly.
  • In a small bowl, mix breadcrumbs with melted butter. Sprinkle over the casserole.
  • Bake for 20-25 minutes, or until bubbly and golden brown on top.
  • Let cool for 5 minutes before serving.
