Ingredients

Scale
  • Crust:

    • 1 ½ cups chocolate cookie crumbs
    • ¼ cup melted butter
  • Filling:

    • 24 oz cream cheese, softened
    • 1 cup granulated sugar
    • 3 large eggs
    • 1 tsp vanilla extract
    • ½ cup sour cream
    • ½ cup melted dark chocolate

  • Topping:

    • 1 cup cherry pie filling
    • ½ cup fresh cherries, pitted (optional)

Instructions

  • Prepare the Crust: Preheat oven to 325°F (163°C). Mix chocolate cookie crumbs with melted butter and press into a springform pan. Bake for 10 minutes, then cool.
  • Make the Filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well. Stir in vanilla, sour cream, and melted chocolate.
  • Bake the Cheesecake: Pour the filling over the crust and bake for 50–55 minutes, or until the center is set. Turn off the oven and let it cool with the door slightly open.

  • Chill & Add Topping: Refrigerate for at least 4 hours. Top with cherry pie filling and fresh cherries before serving.

Notes

  • Use high-quality chocolate for the best flavor.
  • Allow the cheesecake to cool gradually to prevent cracking.

  • Store in the refrigerator for up to 5 days.
