This Cherry Chocolate Ice Cream Cake is a decadent treat featuring layers of creamy chocolate ice cream, cherry filling, and a crunchy chocolate crust. Topped with whipped cream and chocolate shavings, this dessert is perfect for celebrations or a sweet indulgence.

Ingredients

  • 2 cups chocolate cookie crumbs
  • 4 tbsp melted butter
  • 1 quart chocolate ice cream, softened
  • 1 ½ cups cherry pie filling
  • 1 quart vanilla ice cream, softened
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar

 

  • Chocolate shavings for garnish

Instructions

  • Mix cookie crumbs with melted butter and press into a springform pan. Freeze for 10 minutes.
  • Spread softened chocolate ice cream over the crust and freeze for 30 minutes.
  • Add a layer of cherry pie filling and freeze for another 15 minutes.
  • Spread vanilla ice cream over the cherry layer and freeze for 2 hours.
  • Whip heavy cream with powdered sugar until stiff peaks form. Spread over the cake.

 

  • Garnish with chocolate shavings and freeze for 1 hour before serving.

  • Allow ice cream to soften slightly before spreading for easier layering.
  • For a firmer texture, freeze overnight before slicing.
