  • 4 boneless, skinless chicken breasts
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper, to taste
  • 2 eggs
  • 1/4 cup milk
  • Vegetable oil, for frying

Gravy:

  • 1/4 cup all-purpose flour
  • 2 cups milk
  • Salt and pepper, to taste

Instructions

  • Pound chicken breasts to even thickness.
  • Marinate chicken in buttermilk for at least 30 minutes.
  • In a shallow dish, mix flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper.
  • In another dish, whisk eggs and milk together.
  • Dredge each chicken breast in the flour mixture, then in the egg mixture, and again in the flour mixture.
  • Heat vegetable oil in a skillet over medium-high heat. Fry chicken breasts for 4-5 minutes on each side, until golden brown and fully cooked.
  • Remove chicken and drain on a paper towel-lined plate.
  • For the gravy: In the same skillet, whisk flour into the drippings, cooking for 1-2 minutes. Gradually whisk in milk, stirring until thickened. Season with salt and pepper.

Notes

  • For extra crispy chicken, double dredge by repeating the flour-egg-flour process.
  • Serve with mashed potatoes and a side of vegetables for a full Southern meal.
  • You can spice up the gravy by adding a pinch of cayenne or black pepper.
