  • 2 lbs chicken breasts, cubed
  • 1 cup Marsala wine
  • 1 cup chicken broth
  • 1 lb mushrooms, sliced
  • 1 cup heavy cream
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Cook the cubed chicken until browned and cooked through. Remove and set aside.
  3. In the same skillet, sauté onions, garlic, and mushrooms until soft.
  4. Add Marsala wine and chicken broth, simmer until reduced by half.
  5. Stir in heavy cream and cook until the sauce thickens slightly.
  6. Mix in the cooked chicken and season with salt and pepper.
  7. Pour the chicken mixture into a greased casserole dish. Top with mozzarella and parmesan cheese.
  8. Bake for 20-25 minutes, until bubbly and golden brown.
  9. Garnish with fresh parsley and serve.
