  • 2 large chicken breasts, halved lengthwise
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese (for topping)
  • 1/4 cup olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  • Preheat oven to 400°F (200°C).
  • Pound chicken breasts to an even thickness and season with salt and pepper.
  • Prepare 3 bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan, garlic powder, and Italian seasoning.
  • Dredge each chicken piece in flour, then dip in eggs, and coat with the breadcrumb mixture.
  • Heat olive oil in a skillet over medium heat. Cook chicken until golden brown on both sides, about 3-4 minutes per side. Transfer to a baking dish.
