  • 2 chicken breasts, diced
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • 1 tsp thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Heat olive oil in a large pot over medium heat. Add diced chicken, season with salt and pepper, and cook until browned, about 5-6 minutes. Remove and set aside.
  • In the same pot, sauté onion, garlic, carrots, and celery until softened, about 5 minutes.
  • Add diced potatoes and chicken broth, and bring to a boil. Reduce heat and simmer for 15 minutes, until potatoes are tender.
  • Return the cooked chicken to the pot, stir in heavy cream and thyme, and simmer for another 5 minutes.
  • Season with salt and pepper to taste. Garnish with fresh parsley before serving.

Notes

  • For added flavor, cook the chicken with a pinch of paprika or cumin.
  • This soup can be made dairy-free by substituting cream with coconut milk or almond milk.
