  • 2 medium chicken breasts, pounded to ½ inch thick
  • 2 teaspoons chicken taco seasoning
  • Olive oil for cooking
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 medium yellow onion, thinly sliced
  • 3 to 4 cups freshly shredded Monterey Jack cheese
  • 6 large flour tortillas (burrito size)
  • 4 tablespoons unsalted butter
  • Salt and pepper to taste
  • Optional: Sour cream, guacamole, salsa, cilantro for serving

Instructions

  • Season the chicken breasts with chicken taco seasoning.
  • Heat olive oil in a skillet over medium heat and cook the chicken until done. Remove and slice thinly.
  • In the same skillet, sauté bell peppers and onion until tender. Set aside.
  • Butter one side of each tortilla. Place buttered side down in the skillet, add cheese, chicken, and sautéed vegetables. Top with more cheese and another tortilla, buttered side up.
  • Cook until the tortilla is golden brown and the cheese is melted, flipping once. Repeat with remaining tortillas.
  • Serve hot with optional toppings like sour cream, guacamole, salsa, and cilantro.
