2 medium chicken breasts, pounded to ½ inch thick
2 teaspoons chicken taco seasoning
Olive oil for cooking
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 medium yellow onion, thinly sliced
3 to 4 cups freshly shredded Monterey Jack cheese
6 large flour tortillas (burrito size)
4 tablespoons unsalted butter
Salt and pepper to taste
Optional: Sour cream, guacamole, salsa, cilantro for serving
Instructions
Season the chicken breasts with chicken taco seasoning.
Heat olive oil in a skillet over medium heat and cook the chicken until done. Remove and slice thinly.
In the same skillet, sauté bell peppers and onion until tender. Set aside.
Butter one side of each tortilla. Place buttered side down in the skillet, add cheese, chicken, and sautéed vegetables. Top with more cheese and another tortilla, buttered side up.
Cook until the tortilla is golden brown and the cheese is melted, flipping once. Repeat with remaining tortillas.
Serve hot with optional toppings like sour cream, guacamole, salsa, and cilantro.
