Ingredients

Scale
  • 1 lb boneless chicken breast, diced
  • 1/4 cup peanut butter (smooth or crunchy)
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 2 tbsp honey
  • 1/2 cup chicken broth
  • 2 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 1 tbsp sesame oil
  • 1 tsp chili flakes (optional)
  • 2 tbsp vegetable oil
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions

  • Heat vegetable oil in a skillet or wok over medium heat. Add diced chicken and cook until browned and fully cooked. Remove and set aside.
  • In the same skillet, heat sesame oil and sauté garlic and ginger until fragrant.
  • Add peanut butter, soy sauce, hoisin sauce, honey, and chicken broth. Stir until smooth and combined.
  • Optional: Add chili flakes for a spicy kick.
  • Return cooked chicken to the skillet and toss to coat with the peanut butter sauce. Simmer for 2-3 minutes.
  • Garnish with green onions and sesame seeds before serving. Serve hot with steamed rice or noodles.

Notes

  • For a healthier option, use natural peanut butter without added sugar.
  • Adjust the sauce consistency by adding more chicken broth if needed.
  • This dish pairs well with stir-fried vegetables or a side of steamed broccoli.
