  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons vegetable oil
  • 1/4 cup milk
  • Powdered sugar (for dusting)

 

  • 1 cup whipped cream or frosting (for filling)

Instructions

  • Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  • In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  • In another bowl, beat eggs and sugar until thick and pale. Add vanilla, oil, and milk.
  • Gently fold in the dry ingredients until combined.
  • Pour the batter into the prepared pan and spread evenly.
  • Bake for 10-12 minutes, until the cake springs back when touched.
  • While warm, roll the cake in a kitchen towel dusted with powdered sugar and let it cool.
  • Unroll, spread the filling, and roll it back up.
