This Green Goddess Salad recipe is a vibrant and refreshing dish featuring crisp greens, creamy dressing, and fresh herbs.

Ingredients

  • 1 small head green cabbage, finely chopped

  • 1 cucumber, diced

  • 1 bunch green onions, chopped

  • 1 cup fresh spinach or kale (optional)

  • 1 avocado (optional)

For the Green Goddess Dressing:

  • 1 cup fresh basil leaves

  • 1/2 cup parsley

  • 1/4 cup chives

  • 2 garlic cloves

  • 2 tbsp lemon juice

  • 2 tbsp olive oil

  • 1/4 cup nuts (walnuts or cashews)

  • 1/4 cup Greek yogurt or vegan alternative

  • Salt to taste

  • Water to thin, as needed

Instructions

  • Chop cabbage, cucumber, and green onions. Combine in a large bowl.

  • Blend all dressing ingredients until smooth.

  • Pour dressing over salad and toss to coat.

  • Add avocado or spinach if desired.

 

  • Serve immediately or chill before serving.

Notes

You can adjust herbs and greens based on availability. The dressing keeps well in the fridge for 3 days.
