  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large egg whites
  • 2 tsp vanilla extract
  • 1 cup whole milk
  • 1/2 cup sour cream
  • 1/2 cup rainbow sprinkles (jimmies-style)

Buttercream Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup heavy cream
  • 1 1/2 tsp vanilla extract
  • Extra sprinkles for decoration

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, beat butter and sugar until light and fluffy. Add egg whites one at a time, mixing well after each.
  4. Stir in vanilla extract.
  5. Alternate adding flour mixture and milk to the batter, starting and ending with the flour.
  6. Fold in sour cream and gently stir in sprinkles.
  7. Divide batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  8. Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

For the Buttercream Frosting:

  1. Beat butter until creamy.
  2. Gradually add powdered sugar, heavy cream, and vanilla, beating until smooth and fluffy.
  3. Frost the cooled cakes and decorate with extra sprinkles.

Notes

  • Use jimmies-style sprinkles to avoid the colors bleeding into the batter.
  • For a taller cake, bake in 3 pans and reduce baking time to about 20 minutes.
