Ingredients

Scale
  • For the cupcakes:
    • 1 ½ cups all-purpose flour
    • 1 ½ tsp baking powder
    • ¼ tsp salt
    • ½ cup unsalted butter, softened
    • ¾ cup granulated sugar
    • 2 large eggs
    • 1 tsp vanilla extract
    • ½ cup whole milk
    • ½ cup rainbow sprinkles (jimmies)
  • For the vanilla buttercream frosting:
    • 1 cup unsalted butter, softened
    • 3 cups powdered sugar
    • 2 tsp vanilla extract
    • 2-3 tbsp milk
    • Extra sprinkles for decoration

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and line a cupcake tray with paper liners.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, and salt.
  3. Cream Butter and Sugar: In another bowl, beat the butter and sugar until light and fluffy. Add the eggs one at a time, then mix in the vanilla extract.
  4. Add Dry Ingredients and Milk: Gradually mix the dry ingredients into the wet mixture, alternating with milk until smooth.
  5. Fold in Sprinkles: Gently fold in the rainbow sprinkles.
  6. Bake: Divide batter evenly among the cupcake liners and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely.
  7. Prepare Frosting: Beat butter until smooth, then gradually add powdered sugar. Mix in vanilla and milk until the frosting is creamy and spreadable.
  8. Frost and Decorate: Frost the cooled cupcakes with vanilla buttercream and top with extra sprinkles.

Notes

  • Use jimmies-type sprinkles, as nonpareils can bleed into the batter and cause discoloration.
  • The frosting can be tinted with food coloring to match any party theme.
  • Store cupcakes in an airtight container for up to 3 days.
