  • 8 oz pasta (penne, spaghetti, or your choice)

  • 1 cup cottage cheese

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1/4 cup grated Parmesan cheese

  • 1/4 teaspoon red pepper flakes (optional)

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 cup chopped fresh parsley (optional)

  • 1/2 lemon, juiced

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain.

  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

  3. In a blender or food processor, combine cottage cheese, Parmesan, lemon juice, salt, pepper, and a splash of reserved pasta water. Blend until smooth.

  4. Toss the hot pasta with the blended sauce, adding reserved pasta water as needed to create a creamy consistency.

  5. Stir in red pepper flakes and parsley if using.

  6. Serve immediately, topped with extra Parmesan if desired.
