Cowboy Chili is a robust, flavorful dish combining extra lean ground beef, pinto beans, and a zesty blend of spices like chili powder, cumin, and cayenne pepper. Ideal for hearty meals, this chili is balanced with aromatic garlic, onions, and stewed tomatoes, creating a satisfying and savory stew.

  • 3/4 pound extra lean ground beef
  • 2 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 1 (15-ounce) can chopped stewed tomatoes
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/8 teaspoon cayenne pepper
  • 1 (15-ounce) can pinto beans, rinsed and drained
  • 1/2 teaspoon salt

Instructions

  • In a large pot, cook the ground beef over medium heat until browned. Drain excess fat.
  • Add the minced garlic and chopped onion to the pot. Cook until softened, about 5 minutes.
  • Stir in the stewed tomatoes, beef broth, chili powder, cumin, oregano, cayenne pepper, and salt.
  • Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes, stirring occasionally.
  • Add the pinto beans, and simmer for an additional 10 minutes, allowing the flavors to meld.
  • Serve hot, garnished with your favorite toppings like cheese, sour cream, or green onions.

Notes

  • For a spicier chili, increase the cayenne pepper to 1/4 teaspoon or add a diced jalapeño.
  • This chili pairs well with cornbread or tortilla chips.
