  • 2 cups graham cracker crumbs

  • 1/2 cup unsalted butter, melted

  • 3 (8 oz) packages cream cheese, softened

  • 1 cup granulated sugar

  • 1 tsp vanilla extract

  • 3 large eggs

  • 1/2 cup sour cream

  • 2 tbsp all-purpose flour

Instructions

  • Preheat oven to 325°F (163°C).

  • Mix graham cracker crumbs and melted butter; press into the bottom of a springform pan.

  • Beat cream cheese until smooth. Add sugar and vanilla, and mix until combined.

  • Add eggs one at a time, mixing after each.

  • Mix in sour cream and flour until smooth.

  • Pour over crust and smooth the top.

  • Bake for 55–65 minutes until center is almost set.

 

  • Cool completely, then refrigerate at least 4 hours before serving.

Notes

Ensure all ingredients are at room temperature for a smoother batter. Use a water bath for an even bake and to prevent cracking.
