This creamy chicken pesto pasta recipe is a delicious and easy-to-make dish packed with tender chicken, flavorful pesto, and a creamy sauce. Perfect for busy weeknights or a comforting family dinner, this pasta is guaranteed to be a hit!

Ingredients

Scale
  • 12 oz pasta (penne, fettuccine, or your choice)
  • 2 tbsp olive oil
  • 1 lb boneless, skinless chicken breast, cubed
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup heavy cream
  • 1/2 cup basil pesto
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup cherry tomatoes, halved (optional)
  • 2 tbsp fresh basil, chopped (for garnish)

Instructions

  • Cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup pasta water.
  • Heat olive oil in a large skillet over medium heat. Season the chicken cubes with salt and pepper and cook for 5-7 minutes until golden brown and fully cooked. Remove from skillet and set aside.
  • In the same skillet, add the heavy cream and pesto. Stir well and cook for 2-3 minutes until the sauce thickens slightly.
  • Add the cooked chicken and pasta to the skillet. Toss well to coat everything in the sauce.
  • Stir in the Parmesan cheese and add reserved pasta water as needed to achieve the desired consistency.
  • Remove from heat and garnish with cherry tomatoes and fresh basil if desired. Serve warm.

Notes

  • Use store-bought or homemade basil pesto for convenience.
  • Substitute heavy cream with half-and-half for a lighter option.
  • Add spinach or mushrooms for extra veggies.
