This Creamy Coconut Lime Chicken recipe combines tender chicken, creamy coconut milk, and tangy lime for a tropical-inspired, easy dinner.

  • 4 boneless, skinless chicken breasts
  • 1 cup coconut milk
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tbsp lime zest
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • ½ tsp paprika
  • Salt and pepper to taste
  • ¼ cup fresh cilantro, chopped (for garnish)

Instructions

  • Heat olive oil in a skillet over medium heat. Season chicken with salt, pepper, cumin, and paprika.
  • Sear chicken for 3–4 minutes per side until golden brown. Remove and set aside.
  • In the same skillet, sauté minced garlic for 30 seconds. Add coconut milk, lime juice, and lime zest. Stir well.
  • Return chicken to the skillet. Simmer on low heat for 10–15 minutes, until the chicken is fully cooked and the sauce thickens.
