  • 10 ounces dry pasta (fettuccine, penne, or spaghetti)
  • 1 pound boneless skinless chicken breast
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • Salt & pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1 cup tomatoes, diced
  • 2 cups spinach, chopped (optional)
  • 2 cups heavy cream
  • 1/2 cup Parmesan cheese, shredded or grated
  • Salt & pepper to taste

Instructions

  • Cook the pasta according to package instructions. Drain and set aside.
  • Season the chicken breast with garlic powder, Italian seasoning, paprika, salt, and pepper.
  • In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until golden and cooked through, about 6-8 minutes per side. Remove from skillet and set aside.
  • In the same skillet, add butter and minced garlic. Sauté until fragrant, about 1 minute.
  • Add the diced tomatoes and cook for 2-3 minutes until softened.
  • Stir in the chopped spinach (if using) and cook until wilted, about 2 minutes.
  • Pour in the heavy cream and bring to a simmer. Add the Parmesan cheese and stir until melted and combined.
  • Slice the cooked chicken and return it to the skillet. Add the cooked pasta and toss to coat in the sauce.
  • Season with additional salt and pepper to taste.
  • Serve immediately, garnished with extra Parmesan if desired.

Notes

  • For a lighter version, substitute heavy cream with half-and-half.
  • You can add other vegetables like mushrooms or bell peppers for extra flavor and nutrition.
